STRAWBERRY CHEESECAKE POPSCILES

(GF, RSF, High Protein, Low Acid Maintenance Option)

These healthy, creamy frozen popsicles are made with simple ingredients but packed with protein and other nutrients. They make the perfect afternoon treat.

INGREDIENTS: 2 c Strawberries (may substitute blueberries or blackberries for a low acid maintenance protocol), 1 c Cottage Cheese, 1/2 c Plain Greek Yogurt or Plain Nondairy Yogurt of Choice, 5 Tbls Unflavored Protein Powder of Choice, 2 Tbls Pure Maple Syrup, 1 tsp Vanilla, Additional Tools- Popsicle Molds

DIRECTIONS:

  1. Add all of the ingredients to a high-speed blender and blend until smooth.

  2. Pour into popsicle molds.

  3. Freeze for at least 4 hours.

  4. Enjoy!

SMASHED VEGAN CHICKPEA SALAD

(GF, RSF, DF, High Protein, Vegan, Low Acid Healing/Maintenance)

This smashed chickpea salad is the perfect “in a hurry” lunch or dinner recipe for those busy days. Made with all the traditional flavors of a classic tuna salad, but with chickpeas instead of tuna! (You can still use tuna.) This recipe is versatile, easy, delicious and ready in less than 10 minutes! It’s also perfect for weekly meal prep!
