PUMPKIN PASTA SAUCE
(GF, DF, RSF, Vegan/Vegetarian Friendly, Low Acid Healing/Maintenance)
This easy to make pumpkin sauce recipe comes together with simple ingredients and has all the Fall flavors! This sauce has an amazing depth of flavor and will make a great option for those cooler Fall evenings. It’s fast to make and tastes great!
INGREDIENTS: 1 c Pumpkin Puree, 1 Yellow Onion (finely diced, if tolerated), 1 Tbls EVOO, 1 tsp Dried Thyme, 2 Cloves Minced Garlic (if tolerated), 3/4 c Vegetable Broth or Chicken Bone Broth, Salt to Taste, Pepper to Taste (if tolerated), Pinch of Ground Ginger, Serve with Pasta of Choice, Optional to Top with Fresh Sage (fined diced)
DIRECTIONS:
In a medium sized skillet, heat the oil. Add the onion and sauté until soft. Then add the garlic and cook an additional 2-3 minutes. Avoid these ingredients for a low acid healing protocol or if you have an individual intolerance.
Next add the pumpkin puree, cooked onion and garlic, thyme, ginger and broth to a high-speed blender and blend until smooth. Season with salt and pepper as desired.
Add the mixture back to a skillet and heat until warm.
Serve with your favorite pasta! Garnish with fresh chopped sage and pepper (if tolerated).
Recipe Notes: This recipe has simple ingredients. It freezes and thaws really well to make a great meal prep option. This recipe is low acid healing if the onion, garlic and pepper are omitted. Use Pasta of Choice. I use Tinkyada Brown Rice Pasta.
