MEDITERRANEAN CHICKPEA SALAD

(GF, RSF, Vegan Friendly, Low Acid Maintenance)

This Chickpea Salad is full of delicious Mediterranean flavors and takes only a few minutes to prepare. It’s the perfect option for an on-the-go lunch, a delicious side dish, or a family gathering!

INGREDIENTS: 1 can Chickpeas (rinsed and drained), 1 Sm Bell Pepper (finely diced), 1/2 Cucumber (chopped), Handful of Grape Tomatoes (diced, if tolerated), 1/4 c Red Onion (finely diced, if tolerated), 2 Tbls Extra Virgin Olive Oil, 2 Cloves Minced Garlic, Zest of 1 Lemon (may use 2 Tbls Lemon Juice if not following a low acid protocol), Salt to Taste, Pepper to Taste (if tolerated), 1/8 c Fresh Dill (minced), 1/4 c Fresh Parsley (diced), 1/2 tsp Dried Oregano, Optional- Feta, 2 Tbls Red Wine Vinegar

DIRECTIONS:

  1. In a large bowl, combine all of your ingredients.

  2. Chill at least 30 minutes before serving.

  3. Store in an airtight container in the refrigerator for up to 3 days.

Recipe Notes: You can make this recipe vegan friendly by omitting the feta cheese. For low acid protocols, do not use vinegar or lemon juice. This recipe is low acid maintenance as is with those ingredients omitted. To make this recipe healing, omit the bell pepper, onion, garlic and pepper as well.

Lentils are a quick cooking pantry staple beloved for their versatility. This soup is hearty, nourishing and easy to make from just a handful of kitchen staples. It is a recipe that you will frequently turn to because it contains simple ingredients but still tastes delicious. Made with protein rich lentils, vegetables and Italian herbs, it is nutritious and comforting, as well as also being budget friendly. Just add a slice of homemade bread, and you have the perfect comfort meal!
