AUTUMN FRUIT SALAD

(GF, RSF, DF, Vegan Friendly, Low Acid Maintenance)

This fruit salad has the perfect fall twist. It focuses on fresh fall produce and delicious Fall flavors! It’s super simple to make.

INGREDIENTS: 3 c Red Grapes, 2 c Blackberries, 2 Large Gala or Honey Crisp Apples (diced, Pears are also great), 2 Tbls Pure Maple Syrup, Juice of 1 Orange or Nectarine (if tolerated, optional to use zest for low acid protocols), Light Sprinkle of Cinnamon, Optional- Roasted Pecans or Walnuts

DIRECTIONS:

  1. Wash the produce thoroughly. If you want the roasted pecans, you can roast them yourself and buy pre-roasted.

  2. Add all the ingredients to a large bowl. Stir well to combine.

  3. Enjoy!

  4. Store in the refrigerator for up to one week!

Recipe Notes: I highly recommend the roasted nuts. I could not add them this time because the package I opened was bad. But they really add the perfect touch to this recipe!

GLUTEN FREE SWEET POTATO CASSEROLE

(GF, DF, RSF, Vegan Option, Low Acid Healing)

This sweet potato casserole is one of my favorite Holiday side dishes. Smooth, creamy sweet potatoes covered with crunchy pecan topping just hits the spot! It’s a healthier version of the traditional favorite! We make it every Thanksgiving and Christmas, as well as several times throughout the year.
