GLUTEN FREE GINGERBREAD COOKIES
(GF, DF, RSF, Vegan Friendly, Low Acid Healing)
Gingerbread is a Holiday favorite of mine! It really brings me happiness this time of year! And I love experimenting with the flavor! These Gingerbread cookies are the perfect recipe for the Holiday season! You won’t even miss the Betty Crocker store bought version!
INGREDIENTS: 2 c GF Oat Flour, 1 Egg (Option to use Flax Egg), 1/4 c Pure Maple Syrup, 1/8 c Nondairy Milk of Choice, 2 Tbls Melted Coconut Oil, 1 tsp Vanilla, 1 tsp Cinnamon, 1/4 tsp Ground Ginger, 1/4 tsp Ground Cloves, 1/2 tsp Baking Soda, 1/2 tsp Baking Powder
DIRECTIONS:
Preheat the oven to 350 degrees. Line or grease a baking dish.
Add the dry ingredients to a large bowl. Then mix in the wet ingredients. Stir well to combine and also mix with your hands.
Chill the dough in the refrigerator for 1 hour.
Roll the dough out between two pieces of parchment paper. Use a cookie cutter to cut into shape of choice.
Place the dough on the baking sheet. Bake 8-9 minutes. Let cool completely. This recipe makes 10-12 cookies depending on size.
Option to use your favorite icing recipe to make these cookies even more fantastically yummy!
CASHEW CREAM ICING: 1/2 c Raw Cashews (soaked overnight, rinsed and then drained), 1/4 c Full Fat Coconut Milk (more if needed to thin), 3 Tbls Pure Maple Syrup, 1 Tbls Vanilla
*Blend all ingredients in a high-speed blender. Chill for at least 15 minutes. May add to a piping bag for easy decorating.
FLOURLESS CHOCOLATE HAZELNUT COOKIES
(GF, RSF, DF, Low Acid Healing)
Do not miss out on this recipe! These cookies are gooey, chewy, and full of chocolatey deliciousness (carob is used for low acid protocols). They are the perfect treat for the Holiday’s and would pair great with a nice warm cup of hot cocoa, tea or coffee. Truly melt in your mouth yummy! These will be a family favorite very quickly!
INGREDIENTS: 3/4 c Hazelnut Butter, 1/4 c Almond Butter, 1 Egg, 1/2 c Maple or Date Sugar, 3 Tbls Cacao Powder or Carob Powder (for low acid protocols), 1 Tbls Arrowroot Powder, 2 Tbls Pure Maple Syrup, 1 tsp Vanilla, 1/2 tsp Baking Powder, 1/4 c Chopped Hazelnuts (more to garnish), 1/4 c Dark Chocolate Chips or Carob Chips (for low acid protocols)
DIRECTIONS:
Preheat the oven to 350 degrees. Line a baking sheet with parchment paper.
In a large bowl, combine the nut butters, maple or date sugar, egg and vanilla. Once combined, stir in the other ingredients. Mix well so no dry spots remain. The batter will be sticky.
Put the dough in the refrigerator for at least 10 minutes. Then remove and scoop out portions to place on the baking sheet. Option to garnish with a little extra chopped hazelnut.
Bake 10-12 minutes. Let cool completely.

Recipe Notes: If following a low acid protocol, make sure to substitute carob for all chocolate. You may also use all almond butter if you wish. This recipe makes 6-8 cookies depending on size.
