GUT HEALING CHICKEN SOUP

(GF, RSF, DF, Vegan Friendly, Keto Friendly, Low Acid Healing/Maintenance)

This hearty and easy chicken soup recipe is going to be your new favorite cozy meal. It’s so simple to throw together in less than 30 minutes and is full of flavor! It even has many gut healing and detox properties. Comfort food made easy!

INGREDIENTS: 1 Rotisserie Chicken (optional), 8 c Chicken Bone Broth or Vegetable Broth, 2 Large Carrots (peeled and shredded), 4 Celery Stalks (diced), 1 Yellow Onion (diced, if tolerated), 1 c Cabbage, 1 Parsnip (peeled and shredded), 1 Bell Pepper (diced, if tolerated), 4 Cloves Minced Garlic (if tolerated), 3 Springs Fresh Thyme (stems removed, only leaves added), 2 tsp Dried Parsley, 1/2 tsp Dried Savory, Salt to Taste, Pepper to Taste (if tolerated), 1 Bay Leaf (remove before serving), 1 Tbls EVOO, Optional to add Pasta of Choice, Garnish with Fresh Parsley

DIRECTIONS:

  1. Prep by shredding your rotisserie chicken and chopping your veggies. I like to do this earlier in the day so I can just start cooking when its time.

  2. Add your olive oil and the vegetables to a large stockpot. Sauté until the vegetables are soft. Then add the garlic and continue to cook for another minute or two.

  3. Next, stir in the broth, chicken, cabbage and all of the seasonings.

  4. Bring to a boil and then reduce to a simmer. Cover the pot and cook for about 20 minutes. If you’re using pasta, add at the 15-minute mark and continue to simmer until the pasta is soft. Stir occasionally.

  5. Remove the soup from the heat, ladle into bowls and garnish with fresh parsley if desired. Make sure to remove the bay leaf before serving. Enjoy!

Recipe Notes: You can store this in an airtight container in the fridge for two days. If you didn’t add the chicken, it’s fine for up to 4 days. This recipe will also freeze very well for an easy grab and go dinner in the future. If you’re following a low acid protocol, this recipe is maintenance as is. If you omit the onion, bell pepper, garlic and pepper it would be healing.

GLUTEN FREE CHOCOLATE GRANOLA

This chocolate granola is way better than store bought! It’s crunchy, chocolatey and packed with wholesome ingredients. It would be great paired on top of your morning granola with a side of fruit, or for a quick snack! It also makes the perfect recipe for your weekly meal prep!

Recipe Notes: This recipe meets a low acid healing protocol as long as carob is substituted for chocolate.
