GLUTEN FREE PUMPKIN CHOCOLATE CHIP MUFFINS

(GF, RSF, DF, Vegan, Egg Free, Low Acid Healing)

Welcome to the epitome of Fall baking! These are my super moist, deliciously spiced and extra soft pumpkin chocolate chip muffins. They are the perfect breakfast side or an even more perfect “anytime” treat! They truly melt in your mouth!

INGREDIENTS: 1/2 c GF Oat Flour, 1/2 c Almond Flour, 1 tsp Baking Powder, 1/3 c Nut Butter of Choice (Almond, Cashew and Peanut Butter all work great), 1/3 c Pumpkin Puree, 1/4 c Pure Maple Syrup, 1/3 c Nondairy Milk of Choice, 1 tsp Vanilla, 1 tsp Ceylon Cinnamon, 1/4 tsp Nutmeg, 1/8 tsp Allspice, 1/2 c Dark Chocolate Chips (substitute carob chips for low acid protocols)

DIRECTIONS:

  1. Preheat the oven to 350 degrees. Grease or line a muffin tin.

  2. In a medium sized bowl, add all of the ingredients and stir to mix well.

  3. Scoop the batter into the muffin tins.

  4. Bake 17-20 minutes. Let cool completely. Store in an airtight container in the refrigerator for up to 5 days or freeze to thaw later.

Recipe Notes: You can use all GF Oat flour or all Almond Flour if desired. This recipe meets the healing phase of a low acid protocol as long as the chocolate is subbed with the carob.

These taco stuffed sweet potatoes will take your taco night to a new level! They are absolutely delicious, super easy to make and can be loaded with all your favorite toppings! This is the perfect quick and healthy dinner to make your weeknight just a little bit easier!
