GLUTEN FREE AIR FRYER CHICKEN FINGERS
(GF, DF, RSF, Keto Friendly, Low Acid Healing)
These gluten free air fryer chicken strips are crispy, delicious and so easy to make. They make a great option if you need a fast meal as they can be ready in less than 20 minutes. You can also make these in the oven if needed.
INGREDIENTS: 1 lb Chicken Breasts or Tenderloins, 2 Eggs (beaten), 1 c Almond Flour (can substitute coconut flour or brown rice flour), 1/2 tsp Paprika, 1/2 tsp Garlic Powder (omit for low acid protocols), Salt to Taste, Pepper to Taste (if tolerated), 1/4 tsp Onion Powder (omit for low acid protocols), 1/4 tsp Oregano, 1/4 tsp Baking Powder, Avocado Oil or EVOO to grease, Optional 2 Tbls Nutritional Yeast
DIRECTIONS:
Preheat the air fryer to 400 degrees. Grease the pan.
Pat the chicken dry and set aside. Take two bowls, add the eggs to one bowl and the flour and seasonings to another bowl.
Dredge each piece of chicken in the beaten egg and then the flour mixture.
Place each chicken finger into the air fryer basket in a single layer. Work in batches if needed. Spray the top of the chicken with a little oil.
Air fry the chicken for about 10 minutes. Flip, and then continue to cook about 8-10 minutes or until cooked thoroughly. You can also bake these in the oven at 400 degrees for around the same time, maybe a few minutes longer depending on the thickness of the chicken.
Serve with your favorite side dish and dipping sauce or add to the top of a salad.
