GINGERBREAD OVERNIGHT OATS

(GF, RSF, Option DF, High Protein, Low Acid Healing/Maintenance)

I love Gingerbread this time of year! I try to incorporate it in everything! And these Gingerbread overnight oats truly hit the spot! They are easy to make and high in protein and fiber to keep you fueled for the day!

INGREDIENTS: 1/2 c GF Rolled Oats, 1 Tbls Chia Seeds, 1/4 c Plain Greek Yogurt or Plain Nondairy Yogurt, 1/4 c Nondairy Milk of Choice, 1/2 tsp Vanilla, 1/4 tsp Ceylon Cinnamon, Pinch of Ground Ginger, Pinch of Nutmeg, Pinch of Cloves, Optional to Add 1 Tbls Cashew Butter or Powdered Cashew (do not substitute as other options do not yield the same flavor), Optional Toppings: Crushed Nuts, Shredded Coconut, Fruit, Crushed Homemade Gingerbread Cookies

DIRECTIONS:

  1. In a small bowl, add all of your ingredients. Stir well to combine. Let sit about 5 minutes to thicken some and stir again.

  2. Pour the mixture into an airtight container. Cover with a lid.

  3. Place in the refrigerator overnight. Enjoy the next morning.

Recipe Notes: If you’re following a low acid protocol, this recipe as written is maintenance. You can omit the yogurt and replace it with more nondairy milk to make the recipe healing. This recipe makes one serving.

This is one of my favorite muffin recipes! The flavors are vibrant and mouthwatering and give you all the Holiday feels! They make the perfect meal prep breakfast recipe for this crazy busy time of year! A recipe the whole family will rave about!
