EGG ROLL IN A BOWL
(GF, RSF, DF, High Protein, Keto Friendly, Low Acid Healing)
This is such a simple meal to throw together for a fast lunch or dinner idea. It’s the perfect meal for those busy weeknights. It’s high protein, low carb and very tasty!
INGREDIENTS: 1 c Lean Ground Turkey or Beef (you may also use shredded chicken or tofu), 1 c Coleslaw Mix (I used a broccoli slaw mix here), 1/4 c White Onion (finely diced, if tolerated), 1 Tbls Tamari, 1 tsp Sesame Oil, 1/2 tsp Rice Vinegar (omit for low acid protocols), 1/2 tsp Fresh Minced Ginger, Salt to Taste, Pepper to Taste (if tolerated), Optional Add-ins: Cooked Edamame, Chopped Green Onion, Toasted Sesame Seeds
DIRECTIONS:
In a medium sized skillet, brown and drain your meat. Then return it to the skillet.
Next, add your diced onion, sesame oil, and rice vinegar (if using). Sauté until the onion is fully cooked and tender.
Then add the ginger, tamari and coleslaw mix. Cover and cook until the cabbage is wilted. Season with salt and pepper.
Serve and enjoy! This recipe serves one.
Recipe Notes: Omit the onion and the pepper for a low acid healing protocol. For a Low Fod Map protocol, omit onion.
