CROCKPOT POTATO SOUP

(GF, DF Option, Vegan Friendly, Low Acid Healing/Maintenance)

Soup has always been my comfort food, and this potato soup really hits the spot. It’s made with only real ingredients with the option to make it completely dairy free and vegan friendly. And best yet, it’s made in the crockpot for the easiest meal for those busy weeknights!

INGREDIENTS: 5-6 Large Russet Potatoes (washed, peeled and cubed), 1/2 Yellow Onion (finely diced, if tolerated), 1 Stalk Celery (finely diced), 2 c Additive Free Chicken or Vegetable Broth, 2 Cloves Minced Garlic (if tolerated), 1 Tbls Dried Rosemary, 1 tsp Dried Parsley, Salt to Taste, Pepper to Taste (if tolerated), 1/8 c Miyoko’s Dairy Free Cream Cheese (or normal cream cheese if not dairy free), 2 Tbls Butter (omit if needed), 1 c Nondairy Milk of Choice (option to substitute with heavy cream or half and half based on preference and tolerance), Optional- 1 c Shredded Parmesan Cheese, Garnish with Chopped Green Onions

DIRECTIONS:

  1. Wash, peel, and dice all your vegetables. Add them to your crockpot.

  2. Next, add the remaining ingredients except for the milk of choice and the parmesan cheese (if using).

  3. Cook on low 7-8 hours or high for 4-5 hours.

  4. 15-20 minutes before the soup is done, add your milk of choice and parmesan cheese (again, if using). Stir well and continue to cook for the remaining time.

  5. When time is up and the soup is done, add an immersion blender and blend until smooth. Option to ladle the soup into a large high-speed blender and blend until smooth.

  6. Serve with toppings of choice.

Recipe Notes: If following a low acid protocol, this recipe is maintenance as is. To make this recipe healing, omit the onion, garlic, pepper and cream cheese. Also do not garnish with green onion.
