CHOCOLATE CHIP COOKIE DOUGH MUFFINS
(GF, RSF, DF, Keto Option, Low Acid Healing)
These muffins are so easy to make and truly melt in your mouth. They are sure to please the whole family and are great for weekly meal prep!
INGREDIENTS: 1 c Almond Flour, 1/2 c GF Oat Flour, 1 tsp Baking Powder, 1 tsp Vanilla, 2 Tbls Cashew Butter (see recipes notes), 1/4 c Pure Maple Syrup, 1/3 c Nondairy Milk of Choice, 2 Tbls Melted Coconut Oil, 1/2 c Dark Chocolate Chips (or carob chips for low acid protocols)
DIRECTIONS:
Preheat the oven to 350 degrees. Grease or line a muffin tin.
In a bowl, combine all of the dry ingredients. Then add in the wet ingredients and stir well to combine. Make sure no dry clumps remain.
Pour your batter into the muffin cups.
Bake 25-30 minutes. Let cool completely.
Recipe Notes: The cashew butter here is key to getting more of the cookie dough flavor. However, if you cannot tolerate it, the recipe would be fine with another substitute (another nut butter or even a seed butter). You can also substitute the chocolate chips/carob chips for blueberries. You can also use all almond flour or all GF oat flour. These muffins do fall apart a little easy, but they truly melt in your mouth. Let them cool completely. This recipe is also keto friendly if you use all almond flour. Recipe makes 5-6 muffins.

Processed meats are also linked to an increased risk of stomach and colorectal cancer. So, this recipe allows you to make a great tasting deli meat at home with little fuss and no health risk.
