AVOCADO CUCUMBER DIP

(GF, RSF, Vegan Friendly, Keto Friendly, Low Acid Maintenance)

This will easily become one of your favorite appetizers. It’s loaded with simple ingredients and can be served on top of protein or with your favorite cracker. It’s cool, creamy and refreshing! The perfect game time appetizer!

INGREDIENTS: 1 Large Cucumber (peeled and finely chopped), 1 Large Avocado (chopped), Handful of Grape Tomatoes (chopped, if tolerated), 1/4 c Red Onion (chopped, if tolerated), Small Handful of Fresh Cilantro (finely diced), 1 Clove Minced Garlic (if tolerated), 1/8 c Plain Greek Yogurt or Nondairy Yogurt of Choice, 1 Tbls Lime Juice (substitute lime zest for low acid protocols), 1 tsp Lemon Juice (substitute lemon zest for low acid protocols), 1/4 tsp Cumin, Salt to Taste, Optional to Serve with Crackers or Tortilla Chips

DIRECTIONS:

  1. Prep by chopping all your vegetables.

  2. Combine all the ingredients in a bowl and stir well to thoroughly mix.

  3. Chill at least 15 minutes before serving.

  4. Serve with crackers or tortilla chips.

Recipe Notes: If you’re following a low acid protocol, this recipe is maintenance. I recommend serving with a clean cracker option like Mary’s Gone Crackers or a clean tortilla chip option like Siete Chips. You can also make your own tortilla chips from corn tortillas.
