ASIAN PEANUT CHICKEN WRAPS
(GF, DF, RSF, High Protein, Low Acid Healing)
This is one of my favorite lunch recipes. It’s easy to make and delicious. Don’t skip on the peanut sauce. It gives this wrap perfect flavor.
INGREDIENTS: (For the Filling) Cooked, Chopped Chicken (option to use an additive free rotisserie chicken or grilled chicken), Shaved Carrot, Shaved Cucumber, Optional Chopped Lettuce, (For Wrap) Option for Additive Free Store-Bought Wrap or Homemade Cassava Tortilla (see recipe below), (Peanut Sauce) 2-3 Tbls Creamy, Runny Peanut Butter or Other Nut Butter of Choice (melt some in microwave if needed), 1 Tbls Pure Maple Syrup
DIRECTIONS:
Prep by cooking and dicing your chicken or shredding a rotisserie chicken. Finely dice, grate or shave your carrot and cucumber.
If making a homemade wrap, follow recipe and directions. For my homemade cassava tortillas combine 3/4 c Cassava Flour, 1/4 tsp Salt, 2 Tbls Olive Oil and 1/3 c Warm Water. Make sure to add the water a little at a time and knead the dough with your hands. Add more flour if needed. Next, roll out the dough between two pieces of parchment paper. Option to use a knife or pizza cutter to cut into a perfect circle. Cook both sides on a dry skillet (no oil) until firm. This recipe makes 4-6 tortillas depending on size. Option to freeze to thaw as needed.
Create your wrap by adding the chicken, lettuce, cucumber and carrot. Roll it up. Mix the ingredients for your peanut sauce to dip in your wrap.

HOMEMADE CASSAVA TORTILLA:
INGREDIENTS: 3/4 c Cassava Flour, 1/4 tsp Salt, 2 Tbls EVOO, 1/3 c Warm Water
DIRECTIONS: Add all of the ingredients to a bowl and mix thoroughly. Using your hands works best. I also recommend adding the liquid slowly. Too much and the flour will turn watery itself. Next, roll out the dough between two pieces of parchment paper. Option to use a pizza cutter to cut into perfect circles. Cook on a dry skillet. This recipe also freezes and thaws well. It will make 2-4 tortillas depending on size.

It’s a great meal prep lunch recipe and can be thrown together in minutes if you have some cooked chicken on hand! Chickpeas are also great here for a plant-based meal!
