HEALTHY PUMPKIN SPICE LATTE
Skip the Starbucks and make this healthier homemade pumpkin spice latte instead. It’s easy to make, dairy free, vegan and absolutely delicious! It’s also not loaded with the sugar and inflammatory additives like Starbucks is. Did you know the average Starbucks drink is loaded with around 37 grams of sugar (or more) and full of artificial colorings and flavorings? All ingredients that feed inflammation and poor gut health.
INGREDIENTS: 1 c Brewed Coffee or Espresso (substitute 100% Chicory for low acid and autoimmune protocols), 1/2 c Nondairy Milk of Choice (I prefer Elmhurst Cashew or Almond Milk), 3 Tbls Pumpkin Puree, 1 tsp -1 Tbls Pure Maple Syrup (depending on your desired sweetness), 1/2 tsp Vanilla, 1/2 tsp Pumpkin Pie Spice, Pinch of Ceylon Cinnamon (higher health benefits and lower toxic load than normal cinnamon)
DIRECTIONS:
Add all of your ingredients to a high-speed blender and blend until smooth (recommended 1-2 minutes).
Then pour the mixture into a small saucepan. Simmer until warmed to your desired temperature. Once heated, add a small frother and froth until foamy.
Pour into a mug. And enjoy! *I served mine over ice*
ROASTED CORN AND STEAK SALAD WITH CREAMY GREEN GODDESS DRESSING
This recipe is truly restaurant worthy. It’s made perfectly with grilled New York Strip Steak, grilled corn, tons of veggies, avocado, feta and a yummy homemade green goddess dressing! It really hits the spot!
