HOMEMADE BLUEBERRY SALSA

(GF, RSF, DF, Vegan Friendly, Low Acid Maintenance)

This recipe is full of color and flavor! It’s the perfect appetizer or side dish to enjoy on and summer picnic. Serve with your favorite tortilla chip, cracker or on top of protein! This is great with chicken and fish!

INGREDIENTS: 2 c Fresh Blueberries, 1 Red or Yellow Bell Pepper (finely diced), 1/2 Red Onion (finely diced, if tolerated), 1/2 c Pomegranate Seeds (omit for low acid protocols), Large Handful Fresh Cilantro (finely diced), Juice of 1 Lime (substitute Zest of 1 Lime for low acid protocols), 1-2 Tbls Raw Honey, Pinch of Salt, Optional - 2 Jalapeño Peppers (seeded, omit for low acid protocols)

DIRECTIONS:

  1. Prep by washing and chopping all of the vegetables.

  2. Add all of the ingredients to a large bowl and stir to combine.

  3. Serve with your favorite cracker or chip.
