My 4 FAVORITE APPETIZERS
STUFFED MUSHROOMS
These mushrooms are delicious and easy to make! They are a great Holiday appetizer!
INGREDIENTS: 12 White Mushrooms, 1/4 c Almond Flour, 3 Tbls Fresh Parsley (chopped), 1 tsp Fresh Thyme (fresh chopped), 3 Cloves Minced Garlic (if tolerated), Salt to Taste, Pepper to Taste (if tolerated), 1 Tbls EVOO, Handful of Fresh Spinach Leaves, Fresh Grated Mozzarella
DIRECTIONS:
Preheat the oven to 400 degrees. Line a baking sheet with parchment paper.
Prep by cleaning the mushrooms and removing the stems. Do not discard the stems. Pat dry. Then set to the side.
Dice the saved mushroom stems. Then add them to a medium sized skillet with the oil and garlic. Lightly sauté until the mushroom stems are cooked and the garlic is fragrant.
Remove the mushroom stems from the skillet and add to a bowl. Next, add the almond flour, fresh herbs, salt and pepper. Stir well to combine.
Take each cleaned out mushroom head and add a spinach leaf. Then stuff the mushrooms with the almond flour mixture. Garnish with some shaved mozzarella.
Place the mushrooms on the baking sheet and bake for 30-35 minutes. Serve warm.
