These homemade Butterfinger bites can be made in just a few minutes with simple, healthy ingredients and can satisfy all your cravings. It’s the perfect combination of peanut butter and chocolate and have the perfect crunch. They are truly addicting!
INGREDIENTS: 1/2 c Brown Puffed Brown Rice, 1/2 c Chopped Peanuts, 3/4 c Peanut Butter or Almond Butter, 1/4 c Pure Maple Syrup, Splash of Vanilla, 1 1/2 c Dark Chocolate Chips (or Carob Chips for low acid protocols), 1 tsp Coconut Oil
DIRECTIONS:
In a bowl, combine the puffed rice, the chopped peanuts, the peanut butter, the maple syrup and the vanilla. Stir well to combine.
Line a small tray with parchment paper. Scoop out small bite size balls of the mixture, roll into a ball and place on the parchment paper. Place the tray in the freezer for at least one hour.
Once time is up, in another bowl, combine the dark chocolate chips (or carob chips) and coconut oil. Melt until smooth. You can do this in a double broiler or in the microwave.
Remove the bites from the freezer. Dip each bite into the melted chocolate and place it back on the parchment paper. Put back in the freezer for at least another hour.
Enjoy! Store in the freezer. Let thaw a few minutes before eating.
GUT HEALING FRUIT GUMMIES
(GF, DF, RSF, Vegan Friendly)
Commercial gummies are full of so many terrible ingredients. These gummies taste great and are good for maintaining and rebuilding a healthy gut. A well sourced gelatin can provide several health benefits. It has the same gut healing benefits as bone broth. It can help seal and heal the intestinal lining, which can help prevent leaky gut and new food intolerances. In addition, it has a high protein and high amino acid content. Don’t buy Jello brand. I highly recommend Further Foods Gelatin.
