CHICKEN ZOODLE SOUP

(GF, RSF, DF, Keto Friendly, Vegan Options, Low Fod Map Friendly, Low Acid Healing)

Nothing is better on a cold Winter night than chicken soup. This recipe is a great spin on the traditional. And since it’s made in the crockpot it can be made with little fuss to make those hectic weekday nights just a little bit easier.

INGREDIENTS: 3 c Shredded Rotisserie Chicken, 2 Zucchini’s (spiraled), 1/2 White Onion (diced, if tolerated), 3 Stalks Celery (diced), 3 Carrot Sticks (chopped), 4 c Additive Free Chicken Broth, 1 Sprig Fresh Thyme, 4 Bay Leaves, 2 Tbls Oregano, 1 tsp Dried Parsley, 3 Tbls Fresh Dill, Salt to Taste, Pepper to Taste (if tolerated), Juice of 1 Lemon (substitute lemon zest for low acid protocols), Optional Garnish- Fresh Parsley or Fresh Shredded Parmesan

DIRECTIONS:

  1. Add all of the ingredients to a crockpot except the spiraled zucchini. Cook on High 3-4 hours or Low to 7-8 hours.

  2. About 1 hour before the soup is done, add the spiraled zucchini.

  3. Remove the bay leaves and thyme sprig before serving.

Recipe Notes: You can make this recipe vegan friendly by using vegetable broth instead of chicken broth and omitting the chicken. Option to use tofu instead. This recipe is also Low Fod Map Friendly if you omit the onion.
