BUFFALO CHICKEN TAQUITOS

Talk about a tasty meal that takes 20 minutes or less to make! This recipe is just that! It’s fast, easy and sure to please the whole family! Pair it with a steamed vegetable or salad to make a complete meal. This is also a great game day or family cookout appetizer recipe! Note: This is not a low acid recipe for those following a low acid health protocol. This is simply a healthy, easy dinner recipe.
BUFFALO CHICKEN TAQUITOS
(GF, RSF, DF Option, High Protein, NOT A LOW ACID RECIPE)


INGREDIENTS: 2 c Shredded Rotisserie Chicken (additive free store bought or home roasted), 6-8 Tortillas (we use Siete brand or homemade), 1/2 c + 3 Tbls Buffalo Sauce of Choice, 1/4 c Plain Greek Yogurt or Plain Nondairy Yogurt, 1/4 c White Onion (finely diced), 1/2 c Shredded Raw White Cheddar, 1/2 tsp Garlic Powder, Salt to Taste, EVOO or Avocado Oil, Other Tools - I recommend an Air Fryer (oven works too), Optional- Chopped Green Onion
DIRECTIONS:
If using the oven, preheat to 400 degrees and line a baking sheet. my preference for cooking this recipe is an air fryer though.
In a large bowl, combine the ingredients. Mix well.
Heat your tortillas in the microwave for 10-12 seconds. Then take one tortilla at a time and scoop out some of the chicken mixture to place on the tortilla. Tightly roll up each tortilla. Place the wrapped taquito in the air fryer. You may need to work in batches if using the air fryer. You do not want too many taquitos crowding each other. If using the oven, place on the baking sheet with the end of the tortilla facing down so it doesn’t unwrap. Repeat until all the chicken and all the buffalo chicken has been used.
If baking, bake at 400 degrees for 15-18 minutes, flipping halfway. If using the air fryer, cook at 400 degrees for 10-12 minutes, flipping halfway.

Recipe Notes: I recommend using a healthier Buffalo sauce option like Primal Kitchen or Fody Foods. Reminder again, this is not a low acid recipe. You could make it meet a low acid maintenance protocol by subbing the Buffalo sauce for a homemade acid friendly taco seasoning.
